Ingredients

6 portions
  • 6 dried guajillo chili peppers
  • 1/2 white onions
  • 1 clove garlic
  • 3 saladette tomatoes
  • 15 walnuts
  • 1 1/2 cups beef broth
  • 1 kilo beef rib
  • 1 carrot
  • 1 celery
  • 1 tablespoon onion, chopped

Preparation

Fry the chopped onion, celery and carrot in a pan, add the ribs and fry them down first. Once sealed add enough water to cover the meat and cook for 40 minutes.
Clean and devein guajillo chiles. Roast chiles, tomato, garlic and onion in a comal. Once the peppers are roasted, hydrate in hot water until they are soft.
Put in processor hydrated chiles, onion, tomato and roasted garlic. Add the beef broth from the ribs we have almost ready, add the nuts and salt to taste.
Once liquefied add the mole to the pot where we have our ribs, mix and let consume for 20 more minutes.

PRESENTATION

You can accompany it with white rice, tortillas and a good tequila.

TIPS

You can change the nut, pistachio, or almonds, or peanuts and you will be just as good.
