Prepare this rich and traditional bittersweet chicken recipe, with a crunchy batter, accompanied by a sweet and sour sauce with a slightly spicy flavor, together they make the perfect balance in every bite.

4 portions
  • 1/3 cups cornmeal
  • 1/2 cups flour
  • 1/2 cups Water
  • 1 tablespoon flakes of chili
  • 1 chicken breast, cut into cubes
  • enough oil
  • 1 cup pineapple juice, for the sweet and sour sauce
  • 1/2 cups sugar, for the sweet and sour sauce
  • 2 tablespoons white vinegar, for the sweet and sour sauce
  • 2 tablespoons ketchup, for the sweet and sour sauce
  • 1 tablespoon soy sauce, for the sweet and sour sauce
  • 2 tablespoons cornstarch, for the sweet and sour sauce
  • 1 tablespoon chili flake, for the sweet and sour sauce
  • to taste salt and pepper
  • to taste black sesame seed, to decorate


In a bowl, mix the corn flour with the wheat flour, red pepper flakes, salt, pepper and water.
Cover the raw chicken breast in the previous mix and fry for 5 minutes in hot oil until golden and puffy. Remove the chicken from the oil and transfer to a plate with absorbent paper towels to drain off the excess oil.
In a sauce pan, heat the pineapple juice with the sugar, soy sauce, ketchup, red pepper flakes and cornstarch. Mix and cook for 10 minutes or until lightly thickened.
Pour the sauce over the fried chicken, mix and serve warm with black sesame seeds.


Serve with rice and a refreshing drink.


Substitute water, for sparkling water to make a fluffy batter.
