Baked chicken is a rich dish and much easier to prepare than it seems. It is also a great alternative to Christmas turkey.


4 portions
  • 1 1/3 kilos whole chicken
  • Kosher sea salt
  • black pepper
  • 2 teaspoons fresh thyme, finely chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon Dijon mustard


Preheat the oven to 230 (446F)degrees.
Rinse the chicken and dry thoroughly with paper towels. (tip: the drier the chicken, the more crispy the skin will be on the outside)
Salt and pepper the inside of the chicken.
Tie the legs and push the wings back so they are stuck under the chicken. (tip: by tying everything well you ensure that everything is cooked evenly).
With a spoonful of kosher salt sprinkle all of the chicken with salt. A uniform layer of salt above will give the skin a very good taste. Cover also with pepper.
Put the chicken on a tray normally used to roast turkey and when the oven temperature is 230 degrees (446F), put it in the oven.
Roast the chicken for 50-60 minutes.
Remove from the oven and add the thyme, melted butter and mustard to the tray. Stir well and cover chicken with this mixture.
Let rest for 15 minutes and then serve.

Pregunta Se me antojó, así que lo quiero hacer, pero tengo una duda porque me perdí en el paso 8 (saque del horno y agregue el tomillo, la mantequilla derretida y la mostaza a la charola. Revuelva bien y cubra el pollo con esta mezcla) y dejar reposar. Mi pregunta es ¿Después de untar la mezcla del tomillo, mantequilla y mostaza, lo dejo reposar dentro del horno o afuera para dorar? Gracias por tu receta.
