Preparation
Heat a grill over medium heat. Season the flank steak with salt and pepper and cook on the grill until it is medium. Remove from heat and cut into strips.
Cut the rolls in half (horizontally) and heat in an oven or on a comal.
Take each roll and prepare the pepito in the following way: First put a layer of refried beans, on them some strips of flank steak and then lettuce, a few slices of avocado, and tomato.
Make the 4 pepitos in this way and serve.
