Preparation
Cook the pancita in a pot with water, onion and garlic covered about 20 minutes.
In a pot over medium heat, cook the tomatoes with the guajillo pepper for about 15 minutes.
Blend the previous preparation. Integrate the tummy with the sprig of epazote. Continue cooking for around 20 minutes. Season with salt.
Serve the pancita with oregano, chopped onion and serve with corn tortillas.
