Preparation
Heat the oil in a saucepan, add onion, garlic, until bright and transparent, then the Del Fuerte Natural Tomato Puree, ½ bunch of coriander, chipotle, the whole pepper and stir for 5 minutes until everything is well cooked . Add the chicken broth and cook for 10 minutes; reservation.
Add all the ingredients to the blender until they are perfectly well ground.
In a pot place the previous preparation and cook until it boils, if you need chicken broth you can add a little more so it is not so thick.
Add in a bowl, chopped cilantro, the ground beef, olive oil, chopped white onion, egg, chopped garlic , breadcrumbs, salt and pepper. Mix well until the ingredients are incorporated. Form balls of approximately 30 g and add them little by little to the caldillo. Cook for approximately 15 minutes.
To finish, add the potato in cubes after 5 minutes add the carrot and finally the pumpkin.
