This recipe is a delicious dish of pork carnitas for you to perpare in your house either as breakfast, as lunch or even as main meal. Accompany with flour tortillas or corn tortillas and make some delicious carnitas tacos.

Ingredients

6 portions
  • 1 pork loin, cut into large cubes
  • 1/2 teaspoons salt
  • 2 cans green chile, chopped
  • 3 cloves garlic, crushed
  • 1/4 cups chipotle peppers in adobo sauce
  • 3 1/4 cups Water
  • 1 1/2 cups White rice
  • 1/4 cups lemon juice, cool
  • 1/4 cups fresh coriander, chopped

Preparation

Place the loin in a slow cooking pot and season with salt.
Put the chiles and garlic on top of the loin.
Add the chipotle marinade and 1/2 cup of water.
Cover the pot and cook 7 hours on low heat.
Apart, boil the rice with 2 3/4 cup of water.
Add the lemon juice and the cilantro.
Reduce heat to low, cover and cook for 20 minutes.
Remove the spine from the wave and use 2 forks to shred.
Return to the pot and let marinate 15 minutes to absorb some of the liquid.
Serve on top of rice.
