Preparation
Place the loin in a slow cooking pot and season with salt.
Put the chiles and garlic on top of the loin.
Add the chipotle marinade and 1/2 cup of water.
Cover the pot and cook 7 hours on low heat.
Apart, boil the rice with 2 3/4 cup of water.
Add the lemon juice and the cilantro.
Reduce heat to low, cover and cook for 20 minutes.
Remove the spine from the wave and use 2 forks to shred.
Return to the pot and let marinate 15 minutes to absorb some of the liquid.
Serve on top of rice.
