Pork Chicharrón in Green Sauce

The classic chicharrón in green sauce can not be missed. This chicharrón accompanied by this delicious sauce of tomatoes with onion, garlic, serrano pepper and flavored with coriander seeds will be ideal to serve it in tacos, caldosito, as you prefer it.

Ingredients

  • 10 pieces of green tomato
  • 1/2 piece of White onion
  • 4 pieces of chile serrano deveined and seedless
  • 2 teeth of Garlic
  • 1 bunch of coriander
  • 1 pinch of Salt
  • 5 cups of pork cracklings chopped
  • 1 piece of chile serrano cut into rings
  • 1/2 piece of onion cut in hoops
  • 10 pieces of Corn tortillas

    Preparation

    Heat a pot with water, add the tomatoes, white onion, chilies and garlic so that it cooks perfectly. Remove the cooking liquid.
    Add to the blender all the cooked ingredients, with cilantro and salt. Blends perfectly well. Reservation.
    Heat a pot over medium heat with the oil add the sauce to cook 10 minutes or until it reaches boiling point.
    Add the crackling so that it softens with the sauce. Remove the preparation of the fire, served with corn tortillas. Enjoy

    PRESENTATION

    Serve chicharrón with tortillitas, onion rings and finely chopped cilantro.

    TIPS

    For a good sauce it is necessary to remove the acidity of the tomato for this it is important to perfectly cook the tomatoes and fry the sauce.

    Al moler los tomates,cebolla y ajo, usar el agua de cocción y moler tamvien el cilantro, los chicharrones al cocinarse requieren de mucho líquido y su cocimiento es largo para que se suavice la proteína y queden suaves y muy sabrosos. Saludos.
