Ingredients

4 servings
  • 4 pieces of boneless pork chop Amara or Cowboy Amara
  • 4 pieces of guajillo chili pepper without seeds or veins
  • 2 pieces of ancho chili pepper without veins or seeds
  • 1 piece of tomato
  • 1 clove of garlic
  • 1/2 piece of onion
  • 1 piece of clove
  • 1 piece of cinnamon in strips
  • 1 tablespoon of Dried oregano
  • 1/2 tablespoon of ground cumin
  • 125 milliliters of Apple vinager
  • 1 tablespoon of raw sugar
  • 40 milliliters of oil
  • 2 grams of sea ​​salt

    Preparation

    Grill the chiles until lightly browned and hydrated in hot water for 10 minutes.
    Roast the tomatoes, garlic and onion. Remove the skin of the tomatoes.
    Grind the ingredients, except the oil and salt, until a homogeneous sauce is obtained. Add a little water if necessary.
    Heat the oil in a pot over the fire and cook the marinade for 15 minutes or until it reduces and has a thick consistency. Season with salt.
