Preparation
Put the pork trotters in an express pot, along with the salt, onion and herbs, they are approximately cooked for 35 minutes, when the pot begins to be heard, (this time depends on which city you live in, the north of the country, leave them 1 hour).
On the other hand put the onion in oil, carrots and chilies, leave them until you see that the carrot is a little soft, remove and put a whole container with the vinegar. Let it rest so that the flavors mix well.
When the pork trotters are ready (they should be very tender) put them in the vinaigrette preparation, along with the herbs and let it impregnate for about 20 minutes, then remove the excess of viangreta if it is left over.
