  • 80 grams annatto paste
  • 1 kilo orange
  • 300 milliliters white vinegar
  • 400 grams lard
  • 20 grams sea salt
  • 500 grams red onion
  • 10 grams habanero pepper
  • 150 milliliters lemon juice
  • 500 grams banana leaf
  • 2 liters Water
  • 7 grams oregano
  • 1 kilo tortilla
  • 20 grams fresh coriander
  • 3 avocados
  • 350 grams sauce, xnipec

Blend the achiote with white vinegar, the juice from the oranges, sea salt . Reserve.
In a pot or pot with an insert, place the meat (leg), score the leg with a knife without touching the meat.
Add the lard like an ointment over the skin.
Pour everything you have reserved into the blender and try to cover all the meat with achiote marinade. Then add water.
Place the purple onion in quarters and the habanero pepper on each leg.
Covers very well with the banana leaves, paper vita film and aluminum foil in that same order.
Preheat the oven to 200 ° C (392F) and put the meat into the oven. Then drop the temperature to 140 ° c (approx. 280F).
Bakes for 8 hours without interruption.
Place the shredded cochinita on a tortilla and serve with salsa and avocado.

Una salsa originaria de la península del Yucatan con un sabor mucho más atractivo que su nombre pues xnipec se traduce como hocico de perro. Es una salsa fresca pero picante, y tremendamente fácil de preparar, aunque no es tan fácil conseguir naranjas amargas fuera de temporada. Receta de salsa Xniec:INGREDIENTES 1 cebolla (morada, grande, picada o en rodajas muy finas) 3 chiles (frescos, habaneros, picados, sin rabos ni semillas) 125 ml zumo de naranja (zumo de naranja amarga, naranja de Sevilla) 2 tomate (opcional, maduros, pelados y picados, sin semillas) 3 cilantro (hojas frescas picadas) sal (al gusto)
