Ingredients

4 servings
  • 1 piece of pork leg Amara
  • 80 grams of annatto paste
  • 1 kilo of orange
  • 300 milliliters of White vinegar
  • 400 grams of lard
  • 20 grams of sea salt
  • 500 grams of red onion
  • 10 grams of habanero pepper
  • 150 milliliters of lemon juice
  • 500 grams of banana leaf
  • 2 liters of Water
  • 7 grams of oregano
  • 1 kilo of tortilla
  • 20 grams of coriander
  • 3 pieces of avocado
  • 350 grams of sauce xnipec

    Preparation

    Blend the achiote with white vinegar, the juice from the oranges, sea salt . Reserve.
    In a pot or pot with an insert, place the meat (leg), score the leg with a knife without touching the meat.
    Add the lard like an ointment over the skin.
    Pour everything you have reserved into the blender and try to cover all the meat with achiote marinade. Then add water.
    Place the purple onion in quarters and the habanero pepper on each leg.
    Covers very well with the banana leaves, paper vita film and aluminum foil in that same order.
    Preheat the oven to 200 ° C (392F) and put the meat into the oven. Then drop the temperature to 140 ° c (approx. 280F).
    Bakes for 8 hours without interruption.
    Place the shredded cochinita on a tortilla and serve with salsa and avocado.
