  • 3 cups orange juice, natural
  • 1/4 cups lemon juice
  • 1 tablespoon cumin
  • 1/2 tablespoons achiote
  • 1 tablespoon oil
  • 1 tablespoon Orange zest
  • 1/2 cups Sugar substitute
  • 1 raja cinnamon
  • 2 cloves
  • 1 pork leg, boneless
  • enough salt
  • enough black pepper
  • 6 garlic, roast
  • 1 tablespoon oil, to sear the leg

Preparation

Preheat the oven to 200 ° C (392F).
Blend the chipotle chile with the orange juice, lemon juice, the cumin and achiote.
Heat the oil in a saucepan over medium heat, pour the previous preparation and add the orange zest, the sugar substitute, the cinnamon and the cloves. Cook until the sauce thickens. Stretch if necessary.
With the help of a knife, insert into the pork leg the roasted garlic, season with salt and pepper and tie up with thread so that it does not lose its shape. Bathe with the sauce, cover with aluminum foil.
In a pan over high heat with oil, seal the leg on all sides. Transfer to a refractory oven and bale with the sauce. Cover with aluminum foil.
Bake the pork leg for 2 hours and bathe constantly with the sauce to glaze. Remove from oven and let stand for 10 minutes before cutting.
Cut and serve slices dipped in the rest of the sauce. Accompany with mashed potatoes.
