Pork Loin a la Coca-Cola

You will not believe how easy it is to prepare this pork loin a la Coca-Cola with potatoes, ideal for special occasions or for a family meal, its bittersweet taste has a spicy touch that will enchant you.

Ingredients

4 portions
  • 1 cup prune
  • 1/3 cups chipotle chile
  • 2 cloves garlic
  • 1/4 onions
  • 2 allspice berries
  • 1 teaspoon salt
  • 4 cups cola drink, 1/2 cup for liquefying and the rest for baking
  • 800 grams pork loin
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 2 cups potato cambray, in halves
  • parsley, finely chopped to decorate

Preparation

Preheat the oven to 200 ° C (392F).
Blend the prunes with the chipotle, garlic, onion, pepper, salt and ½ cup of coca cola until it becomes a thick sauce.
On a cutting board, flange the loin and spread with the previous preparation.
In a frying pan over medium heat, add the onion with the oil, add the pork loin and sear on both sides, glaze with the plum sauce constantly.
Place the loin in a refractory, spread with the rest of the sauce and add the potatoes, salt, and the rest of the coke.
Cover with aluminum foil and bake for 45 minutes or until the spine has an internal temperature of 65 ° C (149F)
Remove from the oven and on a short board in medallions, serve with the potatoes and decorate with chopped parsley.

PRESENTATION

Serve loin slices with salsa and chapaitas chips. Garnish with chopped parsley.

TIPS

If your sauce becomes too thin and liquid, we suggest you bring it to a boil and let it reduce.

es la primera vez que cocino carne al horno. Todos los ingredientes los llevé al triple pero no contemplé el tiempo de cocción, tardo 3 horas 40 minutos, la espera valió la pena, quedó delicioso. Lo preparé para la cena del 31 de diciembre. :-)
