  • 2 kilos pork tenderloin
  • 1/4 cups lemon
  • 1 pinch fine herbes
  • 2 teaspoons onion, grated
  • 1 cup beer
  • 1 bread roll
  • 2 teaspoons mustard
  • 3 teaspoons honey
  • 3 teaspoons soy sauce
  • 2 cups apple, chopped
  • 1 cup seedless prune
  • 1 cup walnut
  • to taste black pepper
  • 3 tablespoons oil
  • to taste salt
  • 1 cup milk
  • 1 tablespoon white wine
  • 2 tablespoons cream


Preheat the oven to 350 degrees Celsius.
Clean the pork loin with cold water trying to remove the fat carefully.
Cut lengthwise to form a flat sheet.
Scrub the meat with a mixture made with lemon, salt, pepper, herbs, grated onion, 1 teaspoon of oil and a mug of beer.
Let marinate the meat these ingredients for at least one hour.
To make the filling, soak the bread in a cup of warm milk and add the honey, mustard, and soy sauce. Add apples, prunes and nuts.
Put the filling in the center of the tenderloin and tie it as a roll.
Put it in a refractory and cover it with the juices of the marinade, cover with aluminum foil and put it in the oven for an hour and a half.
When removing from the oven, use the juices of the meat with a tablespoon of white wine and 2 tablespoons of cream to make an accompanying sauce.
Leave the meat 15 minutes out of the oven and cut before serving.

La hice para fin de año la verdad falta revisar la lista de ingredientes las cantidades no dan para la sazón. Por otro lado no pide sellar el lomo tampoco para que necesita el aceite y en el caso del mio la cantidad de cerveza no da para que quede suficiente para tener despues de hornear. los tiempos del horneado tampoco estan bien. Y la foto no es la del lomo que dicen.
