Pork Meat Enchilada with BBQ Sauce

This dish is inspired by the classic "pork roast", stew typical of northern Mexico prepared from pork cooked in water with a guajillo chilli sauce and wide. Now we add a unique touch to go out of the box with the incredible original Hunt's BBQ sauce. Do not stop preparing it!

Ingredients

6 portions
  • 1 kilo pork tenderloin, clean and in large cubes
  • enough Water
  • enough salt
  • 3 cloves garlic
  • 1/8 onions
  • 4 guajillo chilies, clean and deveined, for the sauce
  • 1 ancho chili pepper, clean and deveined, for the sauce
  • 2 tomatoes, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 onions, for the sauce
  • 1/2 teaspoons oregano, for the sauce
  • 3 allspices, for the sauce
  • 1/4 teaspoons cumin, for the sauce
  • to taste salt
  • 2 tablespoons lard, or oil
  • 1/4 cups Hunt's ® Original BBQ Sauce
  • 1 leave bay (laurel)
  • 1 Orange peel
  • to taste salt
  • to taste parsley, to decorate

Preparation

Cook the meat in boiling water with salt, garlic cloves and onion until cooked. Drain and reserve.
For the sauce, in a pot with boiling water, cook the chilies with the tomato, garlic and onion, about 10 minutes. Cool slightly
Blend the previous preparation with oregano, pepper, cumin and salt.
Heat oil or lard in a saucepan over medium heat, add pork and sauté lightly. Add the Hunt's® BBQ Original sauce and cook a few minutes.
Incorporates the guajillo chile sauce. Once the boil is gone, add the laurel and the orange peel, cook a few more minutes and season with salt. Serve with parsley, tortillas and rice.

PRESENTATION

Serve in a dish accompanied with white or red rice, accompanied with corn tortillas.

TIPS

For this dish you can use leg or pork rib instead of tenderloin.
