The strong and spicy flavors can be together in the same typical Mexican dish, and the proof of it is this recipe for Pork Ribs in Peanut Sauce.

For this typical recipe you should make a sauce based on roasted peanuts and dried chiles; It is ideal for serving with chicken or pork. This homemade recipe has a secret to make it more spicy: mix tree chiles.

Ingredients

6 portions
  • 2 liters water
  • 1 kilo pork rib, in pieces
  • 1/2 onions
  • 4 cloves garlic
  • 1 cup peanut
  • 2 tablespoons sesame seed
  • 3 tablespoons vegetable oil, divided
  • 3 guajillo chiles, deveined and seedless
  • 2 chipotle chiles, dry, deveined and seedless
  • 3 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 4 black pepper, whole
  • 1 tablespoon cumin, whole
  • 1/2 rajas cinnamon
  • 2 cups meat cooking broth
  • 2 cups pumpkin, Cooked and cut into quarters
  • salt
  • pepper
  • peanut, to decorate

Preparation

In a pot heat the water, add the meat, onion, garlic and salt and cook for about an hour, removing excess foam during cooking. Reservation.
For the peanut sauce, in a comal over medium heat toast the peanuts until they are brown, add the sesame seeds and toast slightly. Remove from heat and set aside.
In a saucepan over medium heat heat a tablespoon of oil and fry the guajillo pepper, the chipotle pepper, the tomato, the onion, the garlic, the black pepper, the cumin, the cinnamon and add the meat broth. Bring it to a boil and cook for 10 minutes.
Blend the above with the peanuts and sesame seeds toasted earlier.
In a saucepan over medium heat, heat another tablespoon of oil, fry the sauce and cook, stirring until lightly thickened. Set aside.
In a saucepan over medium heat heat the rest of the oil, fry the ribs, season with salt and pepper. Add the peanut sauce and let it boil. Add pumpkins and cook 5 minutes.
Serve with toasted peanuts, served with beans and white rice.

PRESENTATION

On a plate, decorated with pumpkins and accompanied by rice and black beans.

TIPS

It is important to stir constantly when cooking the peanut butter to avoid sticking. If you want it a little more spicy, you can add tree chiles.
