Ingredients

6 servings
  • 2 liters of Water
  • 1 kilo of pork rib in pieces
  • 1/2 onion
  • 4 cloves of garlic
  • 1 cup of peanut
  • 2 tablespoons of sesame seed
  • 3 tablespoons of vegetable oil divided
  • 3 guajillo chilies deveined and seedless
  • 2 chipotle chilies dry, deveined and seedless
  • 3 tomatoes
  • 1/4 of onion
  • 2 cloves of garlic
  • 4 black pepper whole
  • 1 tablespoon of cumin whole
  • 1/2 raja of cinnamon
  • 2 cups of broth soup
  • 2 cups of pumpkin Cooked and cut into quarters
  • enough of salt
  • enough of black pepper
  • enough of peanut to decorate

Preparation

In a pot heat the water, add the meat, onion, garlic and salt and cook for about an hour, removing excess foam during cooking. Reservation.
For the peanut sauce, in a comal over medium heat toast the peanuts until they are brown, add the sesame seeds and toast slightly. Remove from heat and set aside.
In a saucepan over medium heat heat a tablespoon of oil and fry the guajillo pepper, the chipotle pepper, the tomato, the onion, the garlic, the black pepper, the cumin, the cinnamon and add the meat broth. Bring it to a boil and cook for 10 minutes.
Blend the above with the peanuts and sesame seeds toasted earlier.
In a saucepan over medium heat, heat another tablespoon of oil, fry the sauce and cook, stirring until lightly thickened. Set aside.
In a saucepan over medium heat heat the rest of the oil, fry the ribs, season with salt and pepper. Add the peanut sauce and let it boil. Add pumpkins and cook 5 minutes.
Serve with toasted peanuts, served with beans and white rice.

PRESENTATION

On a plate, decorated with pumpkins and accompanied by rice and black beans.

TIPS

It is important to stir constantly when cooking the peanut butter to avoid sticking. If you want it a little more spicy, you can add tree chiles.
