Grind the chilies, garlic, green tomato, salt, pepper, and water in a food processor for a few moments. Add the cilantro and grind a few more seconds.
Heat the oil in a saucepan and sauté the onion for about 5 minutes until it is clear. Add green tomato sauce and cumin. Cook over medium heat for 10 minutes. Check the seasoning.
Add the pork crackling, cover the pan and continue simmering for 10 minutes until it becomes soft.
Alternatively you can use a purchased green sauce and just cook the pork rind for 10 minutes over low heat until it becomes soft.
