Preparation
Split the garlic into strips and insert them on the back. Season with salt and pepper and seal in the oil.
In the same saucepan, put the onion and let it color. Add the pepper, nutmeg, mustard, orange juice, chicken broth, white wine and cilantro and let it boil for a few minutes.
Add the loin to the pan and put it in the oven for 45 minutes, or an hour until it is soft (180 degrees). Take it out of the oven and let it cool in the sauce.
Once it is at room temperature, slice the loin and put it on a platter. Then thicken the sauce with a little cornstarch (only if necessary), season with salt and pepper.
Strain the sauce and put on top of the loin. Garnish with orange slices, and accompany with glazed carrots and chips.
