One of the typical Mexican dishes is, without a doubt, tinga. This easy pork tinga recipe is a great option for cheap and profitable food for any day of the week, it is versatile to prepare and even add it to other dishes. Accompany it with beans and on toast, you will love it!

Ingredients

4 portions
  • 4 cups pork pulp, 1 kg
  • enough Water
  • 1/4 onions
  • 1 head garlic
  • 2 leaves bay (laurel)
  • 2 cups tomtato
  • 1/4 onions, for the sauce
  • 2 cloves garlic, for the sauce
  • 1 cup Chile Chipotle Adobado San Marcos®, 215 g, for the sauce
  • 1 cup pork broth, for the sauce
  • 1 tablespoon lard
  • 1 cup onion, filleted
  • to taste salt
  • to taste black pepper
  • enough fried or toasted corn tortilla, To accompany
  • enough refried beans, To accompany
  • enough cream, To accompany
  • enough fresh cheese, To accompany
  • enough Chile Chipotle Adobado San Marcos®, to decorate

Preparation

Cook the pork pulp in enough water, it should cover 4 fingers over the amount of meat; add the onion, the garlic head, the bay leaf and salt, cook for 1 hour at medium temperature. Reserve the liquid.
While the meat you cooked is still hot, shred it and set aside.
For the sauce, liquefy the tomato and onion with the garlic, the San Marcos® marinated chipotle chiles and a cup of pork broth, from where you cooked it.
In a frying pan, fry the onion and the shredded pork with butter for 5 minutes, add the sauce and season with salt and pepper; cook for approximately 15 minutes, until sauce is reduced. Remove from heat.
Serve the tinga prepared on toast with beans, cream and chipotle cheese.
