Preparation
Heat the oil in a large skillet over medium heat.
Season the Meat with salt and pepper.
Place in the pan and stir to cover with oil.
Add the jalapeños and cover the pan.
Leave to cook on low heat for 20 minutes. Uncover and remove the jalapeños from the pan. Picalos and reserve.
Let the pork cook uncovered until it is completely browned and the liquid has evaporated, approximately 10 minutes.
Add the onion and garlic. Cook and stir a couple of minutes.
Add the mushrooms and cook 1 minute more.
Add the tomatoes and chopped jalapeños to the pan and stir with the pork.
Season with cumin. Stir, cover and reduce the fire.
Leave to cook on low heat for 10 more minutes.
