For a special meeting, you can prepare a delicious Amara Pork Loin Head with Italian filling and chestnuts puree. This is an easy recipe that you can cook at home and it will be an excellent meat recipe to share with your guests or family.

  • 1 pig head Amara pork loin head
  • 3/4 of Cup of filling Italian
  • 1/3 of Cup of cranberry
  • 250 grams of Mashed potatoes of Spanish chestnuts for meats
  • 250 grams of nut pecan
  • 250 milliliters of sauce of red colored fruits
  • 250 milliliters of olive oil
  • 1 Cup of spinach fresh cut for filling
  • 1/2 Cup of basil for the filling
  • 2 garlic filleted, for filling
  • 3 spoonfuls of Parmesan cheese grated, for filling
  • 1/3 of Cup of cranberry for the filling
  • 400 milliliters of balsamic vinegar for the filling
  • 400 milliliters of olive oil for the filling


Marinate the pork loin Amara in white wine with herbs for 12 hours.
Cut the pork loin marinated lengthwise, without separating and open it in two, like a butterfly. Cut the other two parts in the same way so that it has an extended shape. It can be flattened a bit with the help of a meat mallet.
Spread the filling over the meat and try to have an even layer of the filling
Roll it up and tie it, depending on how flat it is and how much filling you have put in it. With a kitchen twine tie all the length of the pork loin Amara.
In a hot pan, seal the piece of meat around its circumference with very little olive oil. Cover and cook at a lower temperature, for around 20 minutes or at the desired cooking.
Remove from heat and let rest for a moment; Remove the twine with the help of a knife or scissors.
Cut into 3-cent (1.18 inch) slices and serve with the chestnut, pecan and red fruit sauce.
To prepare the filling you should: Use a pan and sauté the spinach with the garlic without over cooking.
Add the basil and blueberry leaves together with the balsamic vinegar.
Remove from heat and let stand to stop the cooking process
