Ingredients

  • 4 cups of cider
  • 1 Cup of apple juice
  • 1/2 Cup of orange juice
  • 3 cloves of garlic
  • 1 piece of onion
  • 1 tablespoon of ground cinnamon
  • 3 spoonfuls of rosemary
  • 1 tablespoon of thyme
  • 1 tablespoon of Salt
  • 1 tablespoon of black pepper
  • 1 piece of pork leg without bone, 2-3 kg
  • 1 Cup of Butter at room temperature
  • 3 pieces of Red Apple cut into segments
  • 3 pieces of green apple cut into segments
  • 1 Cup of apple jam
  • enough of cherries to decorate
  • slices of orange or another citrus, to decorate
  • enough of rosemary cool, to decorate

    Preparation

    Preheat the oven to 200 ° C (393F)
    Blend the cider with apple and orange juice, garlic, onion, cinnamon, rosemary, thyme salt and pepper until a homogeneous mixture is obtained. Set aside.
    On a board cut the outer layer of the leg forming a rhombus, season with salt and pepper. Spread butter all over the surface until completely covered and place in a baking dish.
    Arrange the apples, cover with the cider mixture, cover with aluminum foil and bake for 30 minutes.
    Remove the leg from the oven, uncover and with the help of a brush, glaze the whole piece with apple jam. Bake again for 40 minutes, uncovered, constantly glazing with juices and jam.
    Remove from the oven, rest a few minutes before cutting and serve the leg decorated with cherries, oranges, rosemary and cooking apples.

    PRESENTATION

    Serve the leg accompanied by dried apples and cherries.
