Preparation
In a large Ziplock bag mix the Pibil Mixed Kitchen marinade and the orange and lemon juices. Add the meat and salt and pepper to taste. Close the bag and remove it well so that everything integrates evenly. Leave to marinate for 1 to 6 hours.
In the express pot heat 2 tablespoons of oil and pour the contents of the bag. Close and when you start to steam the express pot let cook the meat 25 minutes.
While the meat is cooked, chop and mix the ingredients of the habanero chile sauce.
Open the pot and shred the meat finely. Mix with the cooking sauce.
Serve with habanero chile sauce and golden bananas and white rice.
