Ingredients

12 portions
  • 1 pork leg ham, (2.5 kg)
  • 30 slices Fud® smoked bacon
  • 2 tablespoons butter
  • 1 cup tamarind concentrate
  • 1 cup soy sauce
  • 1 cup raw sugar
  • 1 cup ground chipotle pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon oregano
  • 1 twig thyme
  • enough mashed potatoes, To accompany
  • enough parsley, to decorate

Preparation

Preheat the oven to 190 ° C.
Cover the Fud® Christmas Leg with the slices of Fud® smoked bacon, held with chopsticks, placed on a tray, baked for 20 minutes, or, until the bacon is browned.
For the glaze, in a pot over medium heat heat the butter, add the tamarind concentrate, soy sauce, muscovado sugar, ground chipotle, garlic powder, onion powder, oregano and thyme; cook until you have a semi-thick consistency. Let cool and reserve.
Cut a slice of the leg and serve with the tamarind sauce; Accompany with mashed potatoes.

PRESENTATION

Serve in slices accompanied by mashed potatoes.

TIPS

To give a more golden hue to the bacon varnish with a little honey, this way it will caramelize and in addition to giving it color, it will give it a delicious flavor.
