Ingredients

8 portions
  • 1 pork leg
  • 6 ancho chili peppers
  • 4 pasilla chili peppers
  • 3 cloves garlic
  • 1/2 onions, grilled
  • 6 whole cloves
  • 1 cup vinegar
  • 3 tablespoons honey
  • salt, to taste
  • black pepper, to taste
  • 10 cambray potatoes, split in half

Preparation

The leg is cleaned and scratched with a sharp knife, cutting half a centimeter deep the grooves, forming rhombuses on the entire surface of the fatty part.
The chiles are roasted, cleaned, deveined and soaked in hot water.
The garlic and onion are roasted wrapped in aluminum foil on a comal.
In a blender, grind chiles, garlic, onion, cloves, vinegar, honey, salt and pepper.
Spread the leg with the marinade and bake at 160 ° C, calculating 1 hour per kilo, bathe frequently. Once the oven time has elapsed, let it rest before slicing.
Cook the potatoes in water, drain. On a plate put a bed of potatoes and put the leg on top adding a little of the marinade broth.
