Ingredients

8 portions
  • 2 kilos leg, of pork in pieces
  • 18 dried guajillo chili peppers
  • 4 ancho chili peppers
  • 4 cloves garlic
  • 5 grains oregano
  • 1 raja cinnamon
  • 1/2 chocolates, of table
  • 10 black pepper, fat woman
  • 250 milliliters apple vinegar
  • 25 grams coarse salt
  • 3 carrots
  • 2 potatoes
  • 100 grams bacon, sliced
  • 100 grams prune, boneless
  • 1 hemp twine, for bridar

Preparation

Soak the chiles in the apple cider vinegar. Stir well.
