Preparation
In a pot cook the knuckle with salt, garlic onion over medium heat for 20 minutes with the necessary water.
In a saucepan sauté the onion, the garlic, the chopped dried chipotle, the chopped tomatoes, the vinegar, the English sauce, the sugar, the peppers and season with salt. Leave to cook for five minutes. Add the sprig of rosemary, let cool a little grind and strain. Add a cup of Chipotle Hunt's ® BBQ Sauce, mix well and reserve.
Fry the previously cooked pork a little and start to spread the creamy sauce on each side over low heat for 5 minutes; until I took a beautiful golden color. Spread the sauce on each side.
Clean the avocados, mix with finely chopped onion and cilantro. Add salt, lemon and crush.
Prepare the previously refried beans and the totopitos.
Serve a portion of guacamole, a portion of refried beans, a spoonful of BBQ Chipotle Hunt's® Sauce and on it the pork medallion and enjoy the dish.
