Ingredients

8 portions
  • 4 chipotle peppers in adobo sauce
  • 1 1/2 cups pineapple, chopped
  • 3/4 cups raw sugar
  • 1 cup pineapple juice
  • 1 cup bacon, finely chopped
  • 1/2 cups onion, finely chopped
  • 1/2 cups dried fruit, for stuffing the meat
  • 1/2 cups manchego cheese, cut into cubes
  • enough salt
  • enough black pepper
  • 1 pork leg
  • enough pineapple, to decorate
  • enough rosemary, to decorate
  • enough sage, to decorate

Preparation

Preheat the oven to 180 °C (350°F)
Blend the chipotle with the pineapple, sugar and pineapple juice until a homogeneous mixture is obtained.
In a pan over medium heat, fry the bacon, when golden add the onion, pour the pineapple sauce and cook for 10 minutes over low heat, until slightly caramelized.
With a small knife, make 3cm (1.18 inch) deep incisions in the leg. Insert with nuts, cheese, season with salt and pepper.
Tie the loin with kitchen twine and place in a baking tray. Glaze with the sweet and sour pineapple sauce, cover with aluminum foil and bake for 1 hour.
Remove the foil, glaze with the juices and bake again without covering until the surface caramelizes. Let it rest before cutting and serve with mashed potatoes and salad.

PRESENTATION

Serve the pork slices in a platter accompanied by mashed potatoes and salad.

TIPS

When you bake the meat, glaze with the cooking juices, so that it has more flavor and the glaze is perfect.

Muy rica la receta, muy fácil de hacer, le agregue unos toques de mi cosecha, a la sidra y jugo de piña le agregue media taza de almibar de pinña, y al marinado para el glaseado le puse siete dientes de ajo triturados, al final licue todo eso para hacer una salsa para acompañar la pierna y quedo esquisita.
