Pibil is a method of cooking. This term has its origin in the Mayan word pib which means buried. Here we present a practical method with the Express® Pressure Cooker to achieve delicious flavors.

Ingredients

6 portions
  • 90 grams annatto paste
  • 1/2 cups green lemon juice
  • 1 cup orange juice, sour
  • 1 teaspoon salt
  • 1 1/2 kilos Pork Meat, lean, cut into pieces of 5 cm
  • 4 banana leaves, large 30 cm
  • 1/2 cups vegetal oil
  • 6 habanero peppers, roasted and seedless
  • 2 cups red onion, finely chopped
  • 1 cup green lemon juice
  • 1 cup orange juice, sour
  • to taste salt

Preparation

In a large glass or ceramic bowl, dilute achiote paste with lemon and orange juices; Season with salt.
Pour over the meat and mix. Cover and let marinate in refrigeration 4 hours or overnight.
Grill the banana leaves by holding them directly over the flame until they soften. Line the bottom of the Express® Pressure Cooker with the banana leaves.
Place the marinated meat on the leaves and bathe with vegetable oil or melted butter. Fold the ends of the leaves over the meat, moisten them lightly with water and cover with aluminum foil.
Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out; lower the flame to medium and cook for 30 minutes.
Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it!
Let cool slightly, unravel and serve in your caldillo. Accompany with corn tortillas and habanero chile sauce.
For the sauce: Chop the chiles. Mix all the ingredients in a small bowl and let marinate for at least two hours.

TIPS

You can also serve the cochinita as a filling of the famous cake called "French" in Yucatan.
