Ingredients

20 portions
  • 1 kilo Pork Meat, or chicken breast
  • 1 achiote
  • 1 pinch black pepper, fat woman
  • 1 pinch oregano
  • 1 cup apple vinegar
  • 1 cup Water
  • 5 sour oranges
  • salt, to taste
  • 2 habanero peppers
  • 1 red onion, or red
  • 1 kilo corn tortilla

Preparation

Blend achiote, pepper, oregano, vinegar, water and juice that comes out of sour oranges (if you do not get them, then you use normal oranges and add a little more vinegar) and salt.
The pork (preferably combined rib with solid) or chicken (breasts), marinates with the liquefied and is no longer possible all night.
It is cooked in the Express pot for 30 minutes (the pork) or 10 minutes (the chicken), as soon as it releases steam and the valve is put on, some people put banana leaves, but it is just as tasty without them.
The meat is crumbled. It is bathed with the juice that remains in the pot and is served immediately, accompanied with the habanero chile sauce.
For the sauce, the chiles are sliced ​​very small, in julienne the onion that has previously been defiled in boiling water, a splash of vinegar and a pinch of salt; It is stirred perfectly and the taquito is made with warm tortilla and meat.

It can be accompanied with a delicious water of horchata made with melon seeds.
