Ingredients

8 portions
  • 1 Oil Oleic®
  • 1 kilo sausage
  • 1 cup pancake flour
  • 2 cups wheat flour
  • 1 tablespoon baking soda
  • 1 tablespoon chicken bouillon
  • 1/2 teaspoons black pepper
  • 2 eggs
  • 2 tablespoons honey
  • 1 1/2 cups mineral water
  • 1 teaspoon salt
  • skewer sticks, necessary amount
  • 2 tablespoons Oil Oleic®, for ketchup sauce
  • 6 red tomatoes, for ketchup sauce
  • 3 chipotle peppers in adobo sauce , for ketchup sauce
  • 1/4 cups honey, for ketchup sauce
  • 1/3 cups Water, for ketchup sauce
  • 1/3 cups apple vinegar, for ketchup sauce
  • 3/4 teaspoons coarse salt, for ketchup sauce
  • 1 clove garlic, for ketchup sauce
  • 1/2 onions, for ketchup sauce
  • 1 teaspoon black pepper, for ketchup sauce

Preparation

Close the flour and baking powder. Mix them in a bowl, add pepper and chicken broth.
Beat and incorporate the eggs one by one, pour the honey and little by little the mineral water. Add the salt.
Heat the oil.
Insert each sausage on a wooden stick. Dip each skewer in the mixture, allow it to drain and fry. Once fried, drain the excess fat on absorbent paper.
For the sauce: remove the skin and seeds from the tomatoes. Add the tomatoes to the glass of a blender together with the chipotle. Grind them, try not to add water.
Turn the onion and garlic into puree. You can use a food processor for this purpose.
In a pan add the oil and add the tomato puree. Allows the mixture to thicken to form a paste. Add the onion and garlic mixture.
Once you get a paste, add honey, water, vinegar, salt, pepper and chili. Stir well and reduce the temperature to the minimum.
Once it thickens, remove it from the pan and allow it to cool.

PRESENTATION

Present the banderillas in a wicker basket.
