The pork Iberian secret is a piece that is placed in the "axilla" of the pig between the shoulder and the bacon and, according to some, receives this name because it was said to be a very coveted piece that the butchers reserved for their own enjoyment . Others, however, declare that the name of the Iberian secret is due to the fact that it is an internal meat cut and that it is hidden during the cutting. In this case, when using an Iberian secret, the composition of its fat is healthier than the of a normal pig because it has a higher content of monounsaturated fatty acids due to a special diet.

Ingredients

  • 2 Secret of Iberian pig
  • 1 zucchini big
  • 1 onion
  • 1 potato or potato
  • 2 glasses of whole milk
  • 2 spoonfuls of olive oil

Preparation

Heat the pan on a high heat to mark the Iberian secret. It must be marked on both sides. When it is ready, reserve the Iberian secret and preheat the oven to 180ºC.
Add oil in a pot to poach the onion with a little salt. Next, add the zucchini in large pieces and sauté for a few minutes. Finally, add the milk, the potato and cook for 20 minutes, until the potato is soft. Pass the mixture through the mill.
Enter the Iberian secret in the oven for 5 to 8 minutes, depending on the taste of each and the desired point of the meat.
