Because we love the tacos al pastor we create a completely original and different version: a delicious and juicy pineapple stuffed with meat al pastor wrapped in bacon. So juicy that you will love it, served with tortillas, onion, cilantro and a salsa taquera.

Ingredients

8 portions
  • 5 guajillo chilies, soaked, for marinade
  • 1/2 cups annatto paste, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 3 tablespoons orange juice, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1 teaspoon black pepper, for the marinade
  • 1 teaspoon Dried oregano, for the marinade
  • to taste salt, for the marinade
  • 1 kilo Pork Meat, in steak, diced
  • 1 tablespoon oil
  • 1 pineapple
  • 20 slices bacon
  • to taste onion, To serve
  • to taste fresh coriander, To serve
  • to taste lemon, To serve
  • to taste tortilla, To serve
  • to taste red sauce, To serve

Preparation

Preheat the oven to 180° C (350 °F).
Blend the guajillo peppers with the achiote paste, vinegar, orange juice, oregano and the garlic powder until smooth. Season with salt and pepper.
Marinate the pork loin for 20 minutes in this mix.
Heat a frying pan, add vegetable oil and cook the marinated pork for 10 minutes.
Peal the pineapple removing the center from it. Fill the center of the pineapple with the meat and cover the pineapple with bacon using toothpicks. Bake for 20 minutes.
Cut in slices and serve warm with onion, cilantro, lime juice and Mexican tortillas.

PRESENTATION

Serve with tortillas, onion, cilantro and red sauce.

TIPS

You can marinate the meat all night, in this way the flavor will intensify.
