  • 1 tablespoon achiote, for the pastor marinade
  • 1/2 white onions, for the pastor marinade
  • 1/2 tablespoons cumin, for the pastor marinade
  • 3 whole cloves, for the pastor marinade
  • 1/4 cups pineapple juice, for the pastor marinade
  • enough salt, for the pastor marinade
  • 1 kilo pork, steak, cut into small pieces
  • enough vegetal oil, to cook the meat and fry the tortillas
  • 1 kilo corn tortilla
  • 3 cups asadero cheese
  • 1 cup pineapple, cut into cubes
  • 1/4 cups fresh coriander, finely chopped
  • enough red onion, filleted
  • enough white onion, filleted

Preparation

Preheat in oven to 180 ° C (356F)
Blend the ingredients for the marinade until obtaining a marinade, pour over the meat and marinate for 2 hours. Reserve.
Heat a pan over medium heat with the oil and cook the pork with the marinade, season with salt.
Heat the oil in a pan over medium heat and lightly fry the tortillas, remove the excess fat with absorbent paper.
In a refractory oven place a layer of tortillas, the pastor marinated meat, the pineapple, the cheese and repeat the process until the refractory is completed, in the last layer place a layer of cheese, pineapple and bake so that the cheese is baked for around 20 min.
Remove from oven and garnish with cilantro and onion. Serve hot
