Heat a pan over medium heat with the lard and sear the pieces of pork, season with salt, pepper, paprika and oregano, remove. Wash with Salvo® más poder*, expert greaser. * vs Salvo Limpieza y Cuidado.
For the marinade, add the tomato, onion, garlic, chilies, vinegar, allspice, cinnamon, thyme, orange juice and bay leaf until smooth, reserved marinade.
In the same pan cook the marinade until it changes color, season to your liking with salt, add the meat you cooked before and cook covered for 1 hour 30 minutes or until it softens. Varnish the meat constantly.
Remove from the pan, cut into smaller pieces and serve on a plate with fresh lettuce, onions and radishes, accompany with tortillas and enjoy.
