Ingredients

6 servings
  • 1 tablespoon of lard
  • 1 piece of piglet cut into pieces, with skin
  • enough of Salt
  • enough of allspices ground
  • enough of paprika
  • enough of oregano
  • 1 piece of tomato for marinade
  • 1/4 of piece of onion for marinade
  • 1 clove of garlic for marinade
  • 5 pieces of ancho chili pepper clean and soaked in hot water, for marinade
  • 5 pieces of guajillo chili pepper clean and soaked in hot water, for marinade
  • 4 spoonfuls of White vinegar for marinade
  • 1 tablespoon of allspices for marinade
  • 1/2 raja of cinnamon for marinade
  • 1 tablespoon of thyme for marinade
  • 1/4 of Cup of orange juice for marinade
  • 1 sheet of laurel for marinade
  • enough of lettuce finely chopped
  • enough of cambray onion cut into rings, to serve
  • enough of radish cut into slices, to serve
  • enough of Corn tortillas To accompany

    Preparation

    Heat a pan over medium heat with the lard and sear the pieces of pork, season with salt, pepper, paprika and oregano, remove. Wash with Salvo® más poder*, expert greaser. * vs Salvo Limpieza y Cuidado.
    For the marinade, add the tomato, onion, garlic, chilies, vinegar, allspice, cinnamon, thyme, orange juice and bay leaf until smooth, reserved marinade.
    In the same pan cook the marinade until it changes color, season to your liking with salt, add the meat you cooked before and cook covered for 1 hour 30 minutes or until it softens. Varnish the meat constantly.
    Remove from the pan, cut into smaller pieces and serve on a plate with fresh lettuce, onions and radishes, accompany with tortillas and enjoy.

    You can sear it in the pan and bake it at 220 °C (446°F)
