Pineapple Stuffed Shepherd

Because we love the tacos al pastor now we create a completely original and different version: a delicious and juicy pineapple stuffed with meat to the shepherd, wrapped in bacon so juicy that you will love it, accompanied with tortillas, onion, cilantro and a salsita taquera.

Ingredients

  • 5 pieces of guajillo chile soaked, for marinade
  • 1/2 Cup of annatto paste for the marinade
  • 1/4 of Cup of vinegar for the marinade
  • 3 spoonfuls of Orange juice for the marinade
  • 1 teaspoonful of garlic powder for the marinade
  • 1 teaspoonful of Pepper for the marinade
  • 1 teaspoonful of Dried oregano for the marinade
  • to taste of Salt for the marinade
  • 1 kilo of Pork Meat in steak, diced
  • 1 tablespoon of oil
  • 1 piece of pineapple
  • 20 slices of bacon
  • to taste of onion To accompany
  • to taste of coriander To accompany
  • to taste of lemon To accompany
  • to taste of tortilla To accompany
  • to taste of Red sauce To accompany

    Preparation

    Preheat the oven 180 ° C.
    Blend the guajillo chili with achiote paste, vinegar, orange juice, garlic powder, pepper, oregano and salt.
    Pour the previous preparation into the meat and marina for 20 minutes.
    In a pan over low heat add the oil, cook the meat for 10 minutes or until cooked. Reservation.
    In a table peel the pineapple, leaving the plume, hollow the pineapple with the help of a knife and spoon stuffed the pineapple with the meat, wrap with the slices of bacon and hold with chopsticks. Bake for 20 minutes until the bacon browns, turning occasionally.
    Cut into slices and serve with onion, cilantro and tortillas.

    PRESENTATION

    TIPS

    You can marinate the meat all night, in this way the flavor will intensify.
