One of the riches of Mexico is its wide gastronomic offer and from the cuisine of Yucatan you can enjoy this typical recipe from the south of the country, a delicious poc-chuc.

Ingredients

4 portions
  • 1 kilo pork fillet, thin
  • 4 tomatoes
  • 2 onions, large
  • 50 grams fresh coriander
  • 4 bitter oranges
  • salt

Preparation

Salt the fillets on both sides, and place them on the grill (if it is charcoal better), also put the tomatoes (whole) and the onions cut in half.
Turn the meat constantly, as well as move the tomatoes and onion, so that they cook evenly.
In a container, squeeze three oranges, the roasted meat will be put in this container so that it absorbs the juice.
Spread this juice on all the fillets, one by one if necessary.
Remove the tomatoes from the grill when they are soft and the skin begins to separate on its own.
Cut the tomatoes into squares to the point of sauce, as well as the coriander, put in a container, add 1/4 glass with water and a pinch of salt to taste.
Remove the onion when it has a smooth consistency, also cut into small squares, place in a container, and squeeze an orange, add salt to taste and a little water.
Make tacos with the corn tortillas.
