Ingredients

  • 2 kilos pork belly, USMEF®
  • to taste salt
  • to taste black pepper
  • 1/2 cups butter, melted for frosting
  • 1 cup apricot jam
  • 1 tablespoon rice vinegar, for the icing
  • 1 tablespoon ketchup, for the icing

Preparation

Preheat the oven to 200 ° C.
Make small cuts on the surface of the USMEF® quality pork belly in the form of diamonds of the same size. Season with salt and pepper. Place on a tray and bake 90 minutes at 200 ° C. Remove from the oven and reserve.
In a bowl mix the melted butter with the apricot jam, the rice vinegar and the ketchup. Reservation.
Cut the pork belly into small slices, serve with yellow corn.

PRESENTATION

Serve accompanied by yellow corn and potatoes.

TIPS

Once you take the pork belly out of the oven, you can finish cooking on a hot grill for 3 minutes on each side.
