Ingredients

8 portions
  • 3 tablespoons butter
  • 1 cup onion, chopped
  • 1 tablespoon garlic, chopped
  • 1 cup tomtato, Canned
  • 1 cup berries, frozen
  • 1 cup Domino® Muscovado Sugar
  • 2 tablespoons English sauce
  • 3 tablespoons apple vinegar
  • 1 cup apple juice
  • 1 cup Apple sauce
  • 2 leaves bay (laurel)
  • 1/2 habanero peppers
  • to taste salt
  • to taste black pepper
  • 5 pork chops
  • 1 cup butter
  • 1 tablespoon oil
  • 1 teaspoon thyme, ground
  • to taste salt
  • to taste black pepper
  • enough blackberry
  • enough raspberry
  • enough chinese parsley, to decorate
  • enough mashed potatoes, To accompany

Preparation

Heat a pot over medium heat and add the butter, fry the onion and garlic for 2 minutes, add the tomato and the red berries, add the Domino® Muscovado Sugar and cook for 5 minutes, to caramelize. Subsequently, pour the incoming sauce, the apple cider vinegar, the apple juice, the applesauce, the habanero pepper and the bay leaf, mix and season with salt and pepper. Cook for 5 more minutes until the flavors are integrated; remove from heat and cool.
Blend the above until obtaining a sauce and reserve. You can remove the habanero pepper if you wish.
Season the chops with salt, pepper, thyme. In a skillet over medium heat, heat the butter and add a tablespoon of oil, cook the chops on both sides. Pour the frosting and cook for 5 more minutes, add the blackberries and raspberries, remove from the heat.
Serve the chops accompanied by mashed potatoes.

PRESENTATION

Decorate with Chinese parsley and serve with mashed potatoes.

TIPS

If you want the softest cutlet, bake for 15 minutes at 190 ° C.
