Enjoy this delicious and spectacular tender loin filled with apples and nuts, with a delicious pepper marinade that you will love, ideal for parties and to enjoy with your family. So juicy that it will be impossible to resist.

Ingredients

8 servings
  • 1/2 Cup of bacon for the filling, finely chopped
  • 1/2 piece of onion for the filling, finely chopped
  • 1 tablespoon of garlic for the filling, finely chopped
  • 2 cups of apple for the filling, cut into cubes
  • 1/4 of Cup of raisin for the filling
  • 1/4 of Cup of dried fruit mixed, for the filling
  • 1/2 Cup of almond filleted, for filling
  • 1/2 Cup of nut for the filling, finely chopped
  • to taste of salt and pepper
  • to taste of thyme
  • 3 pieces of ancho chili pepper for marinade (deveined and soaked)
  • 2 pieces of guajillo chili pepper for marinade (deveined and soaked)
  • 3 pieces of chipotle chile pepper for marinade
  • 1/4 of piece of onion for marinade
  • 2 cloves of garlic for marinade
  • 1 teaspoonful of Dried oregano for marinade
  • 1 teaspoonful of allspices for marinade
  • 1 tablespoon of oil for marinade
  • 2 kilos of pork tenderloin clean and in sheet

    Preparation

    Preheat the oven to 180°C (350 °F).
    Fry the bacon. Add the onion and the garlic. Add the raisins, the dried fruit, the almonds and pecans. Add the apple. Season with salt, pepper and thyme and cook for 10 minutes. Let it cool.
    For the adobo: blend the 3 peppers with the onion, garlic, oregano and pepper.
    In a sauce pan, heat the oil and fry the adobo. Season and cook for 10 minutes.
    Season the pork loin with salt and pepper. Fill it with the previous mix and roll. Tie the meat with hemp thread.
    Glaze the pork with the adobo. Cover with aluminum foil and bake for an hour or until cooked.
    Cut in slices and serve with salad. Enjoy!

    PRESENTATION

    On an extended plate, served with apples and green salad.

    TIPS

    Cover the loin with bacon, it helps to preserve the juices, in addition to providing flavor.
