Adobo Stuffed Pork Loin

Ingredients

8 portions
  • 1/2 cups bacon, for the filling, finely chopped
  • 1/2 onions, for the filling, finely chopped
  • 1 tablespoon garlic, for the filling, finely chopped
  • 2 cups apple, for the filling, cut into cubes
  • 1/4 cups raisin, for the filling
  • 1/4 cups dried fruit, mixed, for the filling
  • 1/2 cups almond, filleted, for filling
  • 1/2 cups walnut, for the filling, finely chopped
  • to taste salt and pepper
  • to taste thyme
  • 3 ancho chili peppers, for marinade (deveined and soaked)
  • 2 guajillo chilies, for marinade (deveined and soaked)
  • 3 chipotle chilies, for marinade
  • 1/4 onions, for marinade
  • 2 cloves garlic, for marinade
  • 1 teaspoon Dried oregano, for marinade
  • 1 teaspoon allspice, for marinade
  • 1 tablespoon oil, for marinade
  • 2 kilos pork loin, clean and in sheet

Preparation

Preheat the oven to 180°C (350 °F).
Fry the bacon. Add the onion and the garlic. Add the raisins, the dried fruit, the almonds and pecans. Add the apple. Season with salt, pepper and thyme and cook for 10 minutes. Let it cool.
For the adobo: blend the 3 peppers with the onion, garlic, oregano and pepper.
In a sauce pan, heat the oil and fry the adobo. Season and cook for 10 minutes.
Season the pork loin with salt and pepper. Fill it with the previous mix and roll. Tie the meat with hemp thread.
Glaze the pork with the adobo. Cover with aluminum foil and bake for an hour or until cooked.
Cut in slices and serve with salad. Enjoy!

PRESENTATION

On an extended plate, served with apples and green salad.

TIPS

Cover the loin with bacon, it helps to preserve the juices, in addition to providing flavor.
