Ingredients

6 portions
  • 2 kilos pork loin
  • 10 ancho chili peppers
  • 10 mulatto chili
  • 10 morita pepper
  • 4 tomatoes
  • 1 clove garlic
  • 1/4 onions
  • 2 cloves
  • 2 grams cumin
  • 100 milliliters apple vinegar
  • 50 milliliters Water
  • 20 grams sea salt
  • 100 grams bacon, sliced
  • 100 grams almond, peeled
  • 50 grams walnut
  • 100 grams raisin

Preparation

Preheated oven at 190 °C (375°F)
To cook the loin, perforate the whole piece of meat with a knife and insert in each whole the bacon, the walnuts, the almonds and the raisins. Tie the loin with twine and set aside.
Roast he chiles, the tomato and the garlic. Pour into blender and blend with onion, water, vinegar and spices.
Marina the tenderloin for 30 minutes with the previous sauce.
Cover the loin with aluminum foil and bake for an hour. After that time, remove the foil and bake for 20 more minutes or until golden brown.
Remove the twine, let stand for 5 minutes and cut into slices. Serve with the sauce.

PRESENTATION

Serve a slice with sautéed vegetables.

TIPS

It is important to let the loin rest before cutting it to prevent it from loosing its juice.
