Ingredients

4 portions
  • 1 Cube Knorr® Tomato Seasoning
  • 1 teaspoon lard
  • 3/4 cups unsalted peanut
  • 2 corn tortillas
  • 1 teaspoon pequin pepper, dry
  • 2 cloves garlic
  • 1/8 teaspoons cumin powder
  • 1 pinch cinnamon powder
  • 1/8 teaspoons ground black pepper
  • 1 pinch coriander seed, powdered
  • 450 grams pork tenderloin, in medallions

Preparation

In a pan over medium heat without oil, brown the tortillas until crispy.
In the same pan toast the peanuts, chili and garlic.
Soak the chili in 1 cup of hot water until it softens and blend with the rest of the seasonings.
Melt the butter in the pan and fry the pork medallions until they turn golden.
Incorporate the peanut mixture, add Knorr® Tomato Seasoning and reduce the heat.
Let cook for 10 minutes. If you want you can use chicken instead of pork.

Hola Ma Vergenes, las tortillas las tienes que licuar con el resto de los ingredientes y el chile que se remoja en agua caliente efectivamente es el piquin de esta manera sera mas fácil que lo licues. Saludos.
