There is no better sauce for loin dishes than a bittersweet preparation. Pork loin sauce with bittersweet plum sauce Mestiza® kitchen. It is a classic preparation with an incomparable flavor.

  • 1 jar sauce, Bittersweet of Mestiza® Kitchen Plum
  • 1 kilo pork loin
  • 2 cloves garlic, peeled and squeezed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons lard
  • 3/4 cups white wine
  • 1 can beef bouillon, (300 g)
  • 1 bouquet fresh thyme
  • 1 cup prune, boneless


Garnish the garlic with salt and pepper to form a paste and smear the tenderloin on all sides. Let it marinate for at least one hour.
Preheat oven to 180 ° C
In a heavy iron pot, melt the butter over medium heat on the stove and brown the pork loin on all sides. Remove the loin, and add the wine, scraping the bottom and sides of the pot to dissolve the golden pieces that were stuck in the pot. Return the loin to the pot and add the consommé tin and the sprig of thyme. Cover and bake for 30 minutes.
Add the bottle of Sweet and Sour Salsa Plum Mixed Cuisine and prunes. Cover again and bake for 30 more minutes.


Serve the loin in slices accompanied by plums and the delicious sauce.


For a better flavor, marinade the loin with garlic, salt and pepper throughout the night.
