Ingredients

10 portions
  • 2 kilos loin, or pork leg cut into medium squares
  • 1 onion, split in four
  • 2 cloves garlic
  • salt, to taste
  • 4 tablespoons lard
  • 750 grams tomtato
  • 4 serrano peppers
  • 1/2 onions, girl
  • 250 grams poblano pepper, roasted, peeled and cut into thin slices
  • 1 1/2 cups corn kernels, cooked

Preparation

The meat is cooked with water, onion and garlic.
When it is soft, drain and brown on the lard.
The tomato is ground with the chile serrano and the onion and it is strained over the meat, it is left to season very well to slow fire and the rajas and the grains of corn are added.

PRESENTATION

It is served in a bowl of deep mud accompanied by beans from the pot and freshly made tortillas.
