Preparation
In a saucepan over medium heat pour 4 teaspoons of oil and fry the pork to seal it. Subsequently pour the water and let boil. Cover and cook the pork 45 minutes over medium heat.
Remove from heat, strain and reserve both the meat and the cooking broth. Allow the broth to cool and blend perfectly with the tomato, onion, chili and garlic.
In a pot pour the 2 teaspoons of oil over medium high heat. Then pour the sauce into the pot to lightly fry it. Add the pork to the sauce and lower the heat. Cover and cook for 15 minutes. Remove from heat, steep for 5 minutes and serve.
