Ingredients

30 portions
  • 1 pork tenderloin
  • 1 pinch fresh coriander, chopped
  • 1 clove garlic
  • 4 teaspoons chicken consommé
  • 2 ancho chili peppers
  • 1/4 morita chili peppers
  • 1/4 guajillo chilies, big
  • 1/2 onions
  • 1 pinch thyme
  • 1 pinch black pepper
  • 1 pinch cumin
  • 1 pinch clove
  • 1 stick butter
  • 1/2 cups vinegar

Preparation

Clean all chiles, put them to soak in water, vinegar, garlic, onion, cloves, thyme, pepper, cumin, oregano and cilantro.
Grind all the ingredients of the first step, strain it and with this sauce marinate the loin of pork. Cover it and put it in the refrigerator overnight.
Preheat the oven to 180 ° C. Cover the loin with the butter.
Put it to cook covering it bathing it with the same sauce and turning it every half hour. Cook 1 hour 20 minutes.
