Ingredients

6 portions
  • 1 jar Mango sauce with extra special habanero
  • 3 star anise
  • 3/4 teaspoons whole black pepper
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 3 teaspoons olive oil
  • 1 kilo pig cane

Preparation

Grind the black pepper with star anise, coarse salt and sugar in a mortar or coffee mill. Transfer the mixture to a small bowl and add olive oil, mix and reserve
Spread the pasta evenly on the pork rod, put the meat in a sealed plastic bag for at least 4 hours or preferably overnight in the refrigerator
Seal the pork in a thick, large skillet with butter and olive oil until golden brown
Place the meat in a refractory and put it in the preheated oven at 220 ° C for 40 minutes
Remove the meat and cover with aluminum and let it rest for at least 7 minutes. Cut slices about 1 cm

PRESENTATION

Place three on a plate bathed in mango sauce with extra special habanero.

TIPS

This dish can be served with a salad of arugula, praline, goat cheese and mango squares seasoned with a little olive oil, balsamic vinegar, salt and pepper.
