Preheat the oven to 375ºF or 190º centigrade.
In a large pot, heat the olive oil over medium-high heat. Add the onion, the pore, the apple, and the sage. Cook until everything softens for a few minutes.
Remove the mixture from the heat and add the butter, the blueberries, the croutons, the egg, salt and pepper to taste. Slowly put chicken broth until everything is moist. (Allow the filling to cool).
Cut the pork loin until you have a large and flat piece (alternatively you can order it in the butcher shop in this way).
Place the filling on the pork loin and roll it slowly until you have a roll. Tie with cooking wire to prevent the stuffing from coming out at the time of baking and place in a refractory oven.
Cook for 90 minutes (depending on the thickness of the loin the time may be less) or until when inserting a thermometer read 160ºF or 70º Celsius. Carefully remove the cooking wire and let stand for 15 minutes before serving.
