Pork Loin Stuffed with Nuts and Cranberry Sauce

Prepare this delicious pork loin stuffed with pistachios in a white wine sauce. It has a pleasant bittersweet taste, it also remains juicy and smooth. It is the perfect dish to share with the family at Christmas.

Ingredients

8 portions
  • 1 pork tenderloin, clean and flattened
  • 1/4 onions
  • 2 cloves garlic
  • 1 cup pistachio, peeled
  • 1 cup boneless date
  • 2 tablespoons rosemary
  • 2 tablespoons parsley
  • salt, to taste
  • black pepper, to taste
  • 1/2 cups bread crumbs
  • 1/4 cups butter
  • 2 tablespoons vegetal oil
  • 1/2 cups white wine
  • 1/4 cups cranberry , dehydrated
  • 1 cup chicken consommé

Preparation

Chop the white onion, garlic, pistachios and dates very finely. Mix everything together with the rosemary, the parsley and season with salt and pepper.
Add the bread crumbs and mix until everything is well incorporated. Spread the pork loin and spread a little of the butter, place the stuffing and roll up the pork loin.
Tie the pig with cane thread to prevent the stuffing from getting out. Season the outside with salt and pepper.
Seal the pork loin on a very hot pan with oil. Transfer the loin to an oven tray, cover with Pétalo® Foil and bake at 180 ° C for 1 hour.
Remove the pork from the oven and let the loin rest for about 10 minutes before slicing it.
For the sauce: In the pan where the loin was sealed, add onion, garlic and cranberries. Pour the white wine and pour the mixture into the blender.
Serve the pork loin and bathe with the white wine sauce.

PRESENTATION

Serve with a mashed potato and serve along with Pétalo® napkins.

TIPS

When filling the spine, remember to do it with the grease inwards to prevent the interior from drying up.
